My advice would be to sit her down face-to-face and hash out the reasons she does not want to change.  You should also have some idea of what these reasons might be and be able to have a response to these reasons.  I would also suggest to involve her boyfriend in this process as much as you can.

When you are able to develop some sort of plan, the next thing to do is set a date for when you will implement these changes.   This is actually very crucial for the both of you to have some time to get into your new mindset.

While you are helping her develop better eating habits, there are two things to keep in mind.  One is that you need to consistently remind her that you (and hopefully the boyfriend) are there to support her.  Second is that she is going to stumble in this process and have moments of weakness (potentially many).  When this happens, it is important to figure out what the circumstances were that caused her to have that moment so that you and she can better cope with those circumstances when they come up again.  You must also encourage her during those times and not be punishing or judgemental.  It is OK for her to have these moments so that she can learn more about what is keeping her from maintaining a healthy lifestyle, and you must say this to her when they happen.  As long as she is willing, the change will eventually come around.

A lot of these techniques were developed for smoking cessation, but for many people bad food can often be just as addicting and just as dangerous. 		<description>Well, maybe you can tell her you can make dinner for her. Make/buy one of those non-sugar dinners, and you and her can eat it together. Give that stuff to her most of the time. And maybe you shoudl sit down with her and take five minutes, or however long you need, and tell her to stop eating loads of sugars, and start eating less sugar. Tell her how important it is to stay on a diet, and that if she doesn&#039;t, it can kill her, or she can have other things wrong with her. when she grows more older, she can have different things wrong with her. 
Just tell her you don&#039;t wanna see her in pain, or eating things she isn&#039;t supposed to eat. I know how hard it is to get off of something that&#039;s in everything! And I&#039;ll tell her that what she&#039;s doing is exactly what took my mom&#039;s life in the worst possible way. A slow, miserable decline over many years, complete with heart attacks, stroke, coronary bypass surgery, depression, and finally dementia and early death. You don&#039;t just go suddenly and painlessly. Watching her slowly wither away has been my motivation to take care of my diabetes and help others as well. Taking care of it really doesn&#039;t have to be difficult, either. Just takes a little common sense, some reading, and a desire to be around a long time for your kids.

Yeah, I made my mother healthy choices meals too and she rebelled and now I know why!!! What I was fixing wasn&#039;t what she should have been eating!! and on top of which when I left out the salt, it tasted really blah!!!

NOW when someone wants to mind my diet plans for me, I am likely to eat the whole chocolate cake!!!

We all have bad heart and glucose problems and every danged thing else. If I don&#039;t want to eat the slimey green junk with no salt, butter or other seasonings in it, DO NOT INSIST!!

If you are fixing the standard crap the ADA recommends, I don&#039;t blame your mother for wanting the junk food from Taco Bell! At least it tastes like food, and is not a bit less healthy for her.

Are You taking her glucose levels??? Do you even know what her glucose level is when she wants a coke???  Are you living in her skin???
